Grantham Ginger Snap Sticky Chocolate Loaf

  • 22×8cm loaf tin, buttered and lined
  • 355g Grantham Ginger Snap Marmalade
  • 150g 0% fat plain yogurt
  • 3 medium eggs
  • 175g golden caster sugar
  • 175g spreadable butter
  • 175g self raising flour
  • 30g cocoa powder
  • ½ tsp baking powder

For the glaze:



  1. Preheat the oven to 160C/Gas 3
  2. Warm the marmalade in the microwave, then beat in the yogurt and set aside
  3. In a large bowl mix the rest of the ingredient together until smooth
  4. Fold in the yogurt mixture until combined and spoon into the loaf tin
  5. Bake for 1hr and 15 minuets, making sure the skewer comes out clean when inserted
  6. Leave to cool for about 10 minuets then poke all over the top with a skewer
  7. Transfer the loaf onto a wired rack making sure the holes are on the top
  8. Then make the glaze by putting the Marmalade and water together and put in the microwave for 1 minuet then pour over the mixture evenly over the top
  9. Wait until completely cooled before slicing
