ORIGINS & VISION

In recent years pressures in the UK agricultural sector have soared and diversification has become a lifeblood to many farmers, including us! So, we got to work converting one of our outbuildings into a state-of-the-art commercial kitchen and creating a range of jams, marmalades and chutneys for the discerning customer.

At the same time, we remain committed to our core values - in all that we do we aim to support the rural economy, using local labour and produce whenever we can. And with nearby Melton Mowbray recognised as the UK Capital of Rural Food, we are determined to make our mark with preserves that will enhance its reputation.

To add to the flavour, we have named our preserves after nearby villages and hamlets and in our product descriptions you can find out more about the history of our beautiful vale and its surrounds, hopefully enticing you to come and visit.

We are all neighbours on this one small planet of ours, we should therefore try best to nurture it’s resources and use them in a way that benefits nature rather than exploits it, for example we have put back into production the humble damson, a staple of many a British diet, but has been dropped by major manufacturers and has fallen into disuse as it is too fiddly and is hard to control its bittersweet taste note. However we are producing a number of products with damsons that can be sourced locally. We have the same ethics when considering packaging by purchasing locally from renewable resources and using paper wherever possible rather than plastic.

Wherever possible we use locally sourced fruits and vegetables if this is not possible we use reliable UK suppliers to source our produce. Our intention has been to produce a product range that was like something your grandmother would have made with love, care and attention to detail, with this in mind we produce a high quality product that uses no artificial colours or preservatives, emulsifiers or enhancers. Just natural things like sugar or vinegar to preserve our products. We want these products to be delivered to our customers maintaining the greatest taste and with the least impact on the environment and whether that be locally or globally.

We have a very positive mind-set with regard to our tradition of preserves making, contrary to opinion we only use the best of fruits and vegetables in prime condition. They may have been rejected by the supermarkets for being too small too large or miss shaped. Our other ingredients are sourced with the same enthusiasm. Providing the consumer with a real taste of the countryside.

Sugar isn’t our enemy it’s naturally occurring and has been used to preserve all manner of foodstuffs throughout the centuries you if it is used wisely and carefully it can maintain and enhance any offering. We would suggest where a quality product is concerned the greater the infusion of flavour means that you don’t need to consume as much, therefore reducing one’s sugar intake.

Variety is the spice of life, the body’s metabolism needs variety in its intake of fruit and vegetables and other foodstuffs. It is recommended that our products should be used as a part of a balanced diet.

We want to provide a product that your grandmother would be proud of, that it not to say that it has been made on a cooker in a farm house kitchen. We have built a state-of-the-art stainless steel production facility using the most up-to-date technology. Whether using a refractometer to test the amount of sugar in a product, or providing the correct amount of weight into a jar from our purpose-built depositor.

The preserves are cooked in a jacketed pressure vessel so as to not allow any of the product to stick to the sides this also maintains an even cooking temperature throughout.

We are able to demonstrate that it is possible to produce a traditional product in a commercial setting whilst maintaining the highest quality of product.

Our products can be and are used in catering, whether in hotels, restaurants or deli and sandwich shops. It has been used as additions or fillings in pastries pies, cakes or even cheeses. As enhancements to soup, roast meat or hot pots and stews.

We can supply various sizes of catering packs by prior negotiation. All catering packs are delivered in food safe containers with a tamper evident seal.
